Ingredients (Serves 2):
- 2 to 4 ripe peaches
- 1 to 2 teaspoons freshly grated ginger
- 1 tablespoon brown sugar or honey
Method:
- Preheat your oven to 180°C.
- Combine the grated ginger with the sugar or honey and set aside.
- Halve and de-stone the peaches.
- Place them flesh side up in a baking dish.
- Brush the ginger mixture generously over the tops.
- Bake for 30 minutes until soft, juicy and lightly caramelised.
- Serve warm, hot or chilled with any released juices, a spoonful of your favourite yoghurt and a scattering of flaked almonds, along with fresh mint for a refreshing lift.
