After a long day playing chase, building towers, racing cars, dressing dolls, reading books, colouring egg cartons and hiding from tigers, what do you want to eat? Something nutritious and satisfying of course, but also something that takes minimal effort to prepare, so that you can finally sit back, kick your heels up and relax.

I’ve got just the thing – my watermelon and halloumi summer salad. It can easily be put together within 10 minutes and will provide you with healthy fats from the cheese and olive oil, and a variety of vitamins and minerals from all the veggies. It’s super nourishing and cleverly deceiving, tasting like you’ve spent much longer in the kitchen than you actually have!

For an extra dose of fat and protein and a lovely crunch, try adding a sprinkling of mixed seeds – delicious!

Can I make it in advance?
Definitely! I was really surprised how well it lasted overnight. In fact, I think the leftovers I had for lunch were even more delicious – the juices from the watermelon had marinated the halloumi. If using salad leaves, you might want to add those just before serving so that they keep their crunch.

I’m not a fan of halloumi, is there anything I could swap for it?
Feta and watermelon are a classic combination!

Which nuts or seeds would you top it with?
Toasted pumpkin or sesame seeds would work well. Or walnuts or pecans would make a really tasty addition, too.

All you need:

  • ½ Watermelon
  • Halloumi cheese
  • Salad items from the fridge – I like it with cucumber, lambs lettuce and sun-blushed tomatoes
  • Olive oil
  • Black pepper

All you do:

  • Chop the watermelon into bite-sized chunks
  • Grill the halloumi in a pan (use a little olive oil if necessary, to stop it sticking)
  • Mix it all together with a drizzle of olive oil and grind of black pepper
