HIGH FIVE who’s going to a Macmillan coffee morning today? Are you a baker, eater or both?!
This has fast become a favourite bake in our household. It truly is INCREDIBLE… My Little Dude LOVES it, so it gives me a nutrient dense bread when he’s being a tired (yes, he still wakes up far too early!) fuss pot at breakfast.
This is pimped up banana bread with minimal refined carbs (this could be improved by experimenting with coconut flour) and no added sugar at its finest. Each loaf provides mouth-watering, nourishing goodness from the eggs, bananas, cinnamon, milled seeds, carrot and collagen powder… protein, fibre, vitamins, minerals and phytonutrients.
I bake it, eat a few portions smothered in grass-fed butter and then slice the rest up to store in the freezer. This gives me a nutrient dense breakfast side or snack at the ready in seconds after a quick microwave buzz.

Is there anything I can use in place of the carrot?
Yes, If you don’t like or want to use carrot, courgette makes a great alternative (and sneakily adds greens into your day!).
How long can I keep it for once baked?
It will keep in the fridge for up to a week – though I doubt it will last that long!
What else can I top it with?
I love to keep it simple with grass-fed butter, but it would also be delicious spread with a nut or seed butter, or toasted and topped with chia jam – delicious.
All you need:
- 100g gluten free or wholemeal flour
- 50g mixed milled seeds
- 3 eggs
- 3 ripe bananas
- 1 large carrot finely grated (approx. 1 cup or 90-100g)
- 1 tbsp cinnamon
- 1.5 tbsp coconut oil
- 1tsp baking powder
- 1 tsp vanilla extract
- 2 tbsp collagen powered (optional nutri-boost! I used planetpaleo)
All you do:
- Preheat the oven to 180C
- Simply place all the ingredients into one big bowl and mix!
- Cook for 25-30 minutes
