“Let’s go on a strawberry raid!” This watermelon cake got a very warm welcome – in fact I was overwhelmed by the excited wows, proclaimed LOVE of watermelon and oooooooo’s when I cut it open and the hidden fruit cascaded out of the centre. If you’re looking for a baby friendly cake, I can’t recommend making a watermelon cake enough. It was super easy to throw together and clearly a huge hit with the kids (ages ranging between 2 and 8 years). All the fun of a regular birthday cake, without the sugar-induced madness afterwards!  

All you need: 

  • extra-large watermelon 
  • Selection of fruit (melon, kiwi, blueberries, raspberries, grapes, strawberries etc.) 
  • Vegetable shape cutters 
  • Bamboo skewers 

All you do: 

  1. Make a selection of shaped fruits using the vegetable cutters 
  2. Make 2 ‘cake’ layers from the watermelon. Hollow out the base layer and fill it with mixed fruits 
  3. Top with the 2nd ‘cake’ layer and decorate as you fancy with the shaped fruits!
